Ingredients

  • 4 cups shredded lettuce
  • 1 can kidney beans, drained & rinsed
  • 1 large tomato, coarsely diced
  • 1 cup vegan shredded cheddar
  • 1/2 cup vegan burger crumbles optional
  • 1/2 cup vegan ranch dressing
  • 1 cup fritos

Instructions

  • Wash lettuce and place on a cutting board. Finely slice with a large knife. Transfer to a large mixing bowl. Mix in drained and rinsed kidney beans, diced tomato, shredded cheddar cheese, burger if using, and ranch dressing. Just before serving, mix in fritos.
