Vegan Taco Salad with Ranch
A crisp and fresh vegan taco salad with an American favorite: ranch dressing.

- 4 cups shredded lettuce
- 1 can kidney beans, drained & rinsed
- 1 large tomato, coarsely diced
- 1 cup vegan shredded cheddar
- 1/2 cup vegan burger crumbles optional
- 1/2 cup vegan ranch dressing
- 1 cup fritos
Wash lettuce and place on a cutting board. Finely slice with a large knife. Transfer to a large mixing bowl. Mix in drained and rinsed kidney beans, diced tomato, shredded cheddar cheese, burger if using, and ranch dressing. Just before serving, mix in fritos.
