Who doesn’t love no-bake cookies? Just like their name boasts, they don’t require any baking making them so quick and easy to toss together. These ones have a healthy twist and surprise ingredients–rice crispies! You’ll love the extra crunch and crispiness in these vegan no-bake cookies.

Vegan Peanut Butter No-Bake Cookies

Ingredients

  • 1/2 cup non-dairy milk
  • 1/4 cup cocoa powder
  • 1 cup sugar coconut, Florida crystals, or white sugar
  • 1/4 cup coconut oil or vegan margarine
  • 1 cup peanut butter or almond butter
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 2 cups quick oats
  • 2 cups rice crispy cereal sub quick oats if preferred

Instructions

  • In a large pan on the stove, melt together the milk, cocoa powder, sugar, coconut oil, peanut butter, vanilla extract, and salt over medium heat stirring frequently until smooth and runny.
  • Mix in oats and rice cereal.
  • Allow to cool until mixture can be easily handled (in refrigerator or on counter).
  • Form into cookies and place on a cookie sheet. Chill in refrigerator.
  • Store in airtight container in refrigerator up to one week or out of refrigerator for three days. These cookies also freeze well.
