Ingredients

  • 6 cups rolled oats
  • 1 cup quick oats
  • 1/2 cup almond flour can sub pecan meal or ground walnuts
  • 1/4 cup whole wheat flour
  • 4 cups rice krispies cereal
  • 1 cup nuts of choice, chopped pecans, almonds, and walnuts are my favorites
  • 1/2 cup unsweetened shredded coconut
  • 1 tsp salt
  • 1 1/2 cups maple syrup Adds sweetness, crispiness, and wonderful maple flavor
  • 1/2 cup almond butter or peanut butter
  • 2 tbsp vanilla

Instructions

  • Preheat oven to 185F.
  • In a large mixing bowl, mix together rolled oats, quick oats, almond flour, whole wheat flour, rice krispies, nuts, shredded coconut, and salt. Add in maple syrup, nut butter, and vanilla. Use a spoon, stand mixer, or your hands to thoroughly combine.
  • When thoroughly mixed, transfer to a parchment or baking sheet lined cookie sheet (may need 2 cookie sheets depending on size.)
  • Stir granola after 2-3 hours to prevent burning.
  • Bake 4-5 hours, or until almost entirely dry and crispy.
  • Allow to cool on countertop. When cool, transfer to an airtight container. Store for several weeks.
