Delicious ooey-gooey whole foods, plant based chocolate chip cookies. Make sure to grind your walnuts finely in a food processor (recommended) or blender. Alternatively you can use almond flour but walnuts will yield the best results.

Equipment

  • Food Processor For grinding walnuts, can use blender

Ingredients

  • 2 cups white whole wheat flour
  • 1 cup walnuts ground fine in food processor (or blender)
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1/2 cup maple syrup
  • 1/4 cup non-dairy milk
  • 1 tbsp ground flaxseed (flax meal)
  • 2 tsp vanilla
  • 1/2 cup non-dairy chocolate chips

Instructions

  • Preheat oven to 350F.
  • In a medium-sized mixing bowl, combine together flour, ground walnuts, baking soda, and salt.
  • Add in maple syrup, milk, ground flaxseed, and vanilla. When combined, stir in chocolate chips last.
  • Bake 8 minutes, then remove from oven and place on cookie rack to cool. They will be soft when you remove them from the oven-that's how you want it!
