Delicious and super fast vegan pancit sure to please a crowd. We love to serve this for company, meat eaters, vegans, or vegetarians. Our favorite side dish with this is Costco vegetarian spring rolls which are also vegan.

Easy Vegan Pancit

Ingredients

  • 5 oz vermicelli or mung bean noodles can be slightly more or less noodles if convenient
  • 6 cups frozen stir fry veggies Love Costco's
  • 1 can chai pow yu can sub diced tofu cubes fried with soy sauce if desired
  • 1 can sliced mushrooms optional
  • 1/4 cup honey or maple syrup
  • 3 tbsp Bragg's liquid aminos
  • 2 tbsp sesame oil
  • 2 cloves garlic or 2 teaspoons garlic paste
  • 1/2 inch fresh ginger or 1 teaspoon ginger paste

Instructions

  • Place frozen veggies in sauce pan over medium heat. Add 1-2 cups of water, enough to coat bottom of the pan. Cook veggies until beginning to soften but not "well done." Drain any excess water.
  • In a small saucepan, bring six cups of water to a boil. When boiling, shut off heat and add noodles. Let noodles sit until soft, two minutes or more. Drain water. Add noodles to vegetable mixture.
  • Chop Chai Pow Yu as desired. Add to pancit.
  • Add in seasonings and stir to incorporate. Cook an additional 1-2 minutes over medium heat. Add salt to taste.
