Vegan Chicken Salad

- 2 cups vegan shredded chicken see post for link to recipe, finely shred in food processor
- 1 cup dill pickle relish or finely diced dill pickles
- 2 cups celery, finely diced or pulverized in food processor
- 1/4 cup sweet or red onion, finely diced or pulverized in food processor
- 3/4 cup vegan mayonnaise of choice I typically use Hellmann's--delicious but not low fat!
- 2 tsp vegan chicken seasoning if not available, salt to taste
- 2 tsp onion powder
- 1 tsp dill weed
- salt to taste
Finely shred vegan shredded chicken in food processor. Transfer to a large mixing bowl.
Mix in relish, celery, onion, mayonnaise, and seasonings. Mix until thoroughly combined.
Serve as a sandwich spread, a cracker dip, on a salad, or with a charcuterie board.
