Strawberry Walnut Salad

Ingredients

  • 4 cups fresh mixed greens I love to buy the pre-washed type
  • 1 cup sliced fresh strawberries, stems removed
  • 1 avocado, cut into small cubes
  • 1 cup cucumber, cut into rounds or quarters
  • 1 orange peeled & sliced, then quartered into small segments

Roasted Walnuts

  • 1 cup coarsely chopped walnuts
  • 1 tbsp water
  • 1-2 tbsp sweetener of choice such as maple syrup, coconut sugar, or brown sugar maple syrup is my favorite
  • pinch of salt

berry vinaigrette

  • 3/4 cup mixed berry juice concentrate I use Old Orchard available at many grocery stores
  • 1 tbsp cornstarch
  • 1/2 cup water
  • 1 tbsp lemon juice
  • 3 tbsp sweetener of choice such as maple syrup, coconut sugar, or Florida crystals

Instructions

  • Place the fresh mixed green in a shallow serving bowl. Carefully arrange fruit, avocado, and cucumbers on top.
  • For roasted walnuts, mix together coarsely chopped walnuts with sweetener, water, and salt. Place on a lined or greased cookie sheet and bake at 400 for 8 minutes stirring once halfway through. Remove from oven and allow to cool. They will become crispy as they cool.
  • For the dressing, bring berry juice concentrate to a boil over medium heat. In a small bowl, thoroughly mix together cornstarch and water. Slowly pour cornstarch slurry into juice concentrate on the stove while stirring constantly. Continue to stir until dressing thickens, about 3-5 minutes.
  • Turn off heat. Mix in lemon juice, sweetener, and salt.
  • Drizzle over the strawberry walnut salad and store any leftovers in an airtight container in the refrigerator.
