Oil-Free Mexican Three Bean Salad

Ingredients

  • 1 can garbanzo beans, rinsed & drained
  • 1 can kidney beans, rinsed & drained
  • 1 can black beans, rinsed & drained
  • 1 cup sweet corn
  • 1 cup bell pepper, finely diced any color
  • 1 avocado diced
  • 1/2 cup red onion, finely diced
  • 1/4 cup cilantro, finely sliced
  • 2 tbsp lime juice fresh if available, can sub lemon juice
  • 1 clove garlic, crushed
  • 1/2 tsp sweetener of choice
  • 1/2 tsp oregano
  • 1/4 tsp salt
  • 1/4 tsp cumin
  • 1/4 tsp salt adjust to taste

Instructions

  • Combine all together in a large mixing bowl and serve with a side of your favorite corn chips for dipping!
