Vegan Mozzarella with Tofu

Ingredients

  • 2 boxes Mori-Nu tofu, drained any firmness
  • 1/2 cup tapioca starch also called tapioca flour
  • 2 tbsp nutritional yeast flakes
  • 2 tsp salt
  • 1 1/4 cups water
  • 1/3 cup canola oil or vegetable oil
  • 2 tbsp lemon juice

Instructions

  • In a blender, blend all on high until smooth, about 1 minute. Transfer to a saucepan. Cook over medium to low heat whisking frequently to prevent burning and clumping. Cook until thick, about 3-5 minutes. Transfer to an airtight container and store in refrigerator. Stores for up to a week.
