EASY Vegan Peanut Butter Rice Krispy Treats
Easy to make classic rice crispy treats with a healthy and tasty twist

- 6 cups rice krispy cereal
- 2/3 cup natural peanut butter warmed to soften
- 2/3 cup honey warmed to melt
- 1 cup vegan chocolate chips optional
- 2 tbsp coconut oil optional
In a large mixing bowl, combine rice krispy cereal, peanut butter, and honey. Press firmly into parchment-lined 9x13 casserole dish. (To make it easier to press firmly, cover with parchment paper or silpat. Press firmly all over with hands or large cup.)
Melt chocolate and coconut oil together on stovetop or in microwave. Spread evenly over dessert.
Refrigerate bars until cool and firm. Topping is optional but will help bars hold together better and it's delicious!
