Bring a medium sized pot of water to a boil on the stove, enough to cover the potatoes when cubed.
Peel or scrub potatoes and cube large.
Place in boiling water and boil until fork tender, 5-10 minutes.
Drain and transer potatoes to frying pan.
Over medium heat, fry potatoes and diced onion in frying pan using small amounts of water to prevent sticking. Add olive oil at this point if using or spritz with cooking spray.
Add in garlic powder, salt, parsley, and smoked paprika.
Cook until potatoes begin to brown, stirring often.
